36 months on the fine lees. During the refinement period the sediments are brought back into suspension at least 6/8 times 

DISGORGEMENT A LA GLACE ET LIQUEUR D’EXPEDITION After the refinement we move on to the REMUAGE phase, which is done by hand on the wooden pupitres, practically the yeasts are brought down from the bottom of the bottle, up to the neck. In jargon, the bottles are placed “on top”. The subsequent processing consists in freezing the neck of the bottle, uncorking it, introducing the liqueur d’expedition, filling it with the same wine and closing it with the mushroom cap. After a few months we are ready for the toast.
